中國雲南普洱卡蒂姆生於海拔1千米黃蜜處理

風味:莓果,菠蘿蜜,蜜糖,酒心朱古力

1. 產地背景:雲南普洱

  • 地理位置:雲南普洱市(原思茅)地處北緯22°附近,海拔約1,200-1,600米,屬於熱帶高原氣候,晝夜溫差大、雨量充沛,非常適合咖啡種植。
  • 咖啡種植歷史:雲南自19世紀末開始種植咖啡,但精品化轉型是近十幾年的事。
    普洱與保山、德宏並列雲南三大咖啡產區,當地以小農種植為主,品種以卡蒂姆(Catimor)為主,也有少量鐵皮卡(Typica)和波旁(Bourbon)。
  • 風土特色:普洱咖啡豆通常帶有堅果、巧克力基調,酸度中等,甜感突出,蜜處理法則能進一步強化其甜味和醇厚度

2. 什麼是「黃蜜處理」?

蜜處理(Honey Process) 是介於水洗和日曬之間的處理法,源自中美洲,近年被雲南產區引進並改良。核心在於保留部分果膠(即「蜜」)進行發酵,根據保留果膠的比例和乾燥方式,分為:

  • 黃蜜:保留約50%果膠,乾燥時間較短(約8-10天),發酵程度較輕,風味清爽酸甜,帶有蜂蜜和水果調性。
  • 紅蜜/黑蜜:保留更多果膠,乾燥時間更長,風味更濃郁(常見於哥斯大黎加或巴拿馬)。

黃蜜處理的特點:

  • 口感:比水洗更甜潤,比日曬更乾淨,酸度柔和,body(醇厚度)適中。
  • 風味:常見蜂蜜、焦糖、柑橘、杏桃等香氣,適合不喜歡強烈發酵感的飲用者。

3. 雲南黃蜜咖啡的典型風味

  • 香氣:乾香可能帶有焦糖、烤堅果;濕香呈現熱帶水果(如芒果)或柑橘。
  • 口感:中高甜度,酸度明亮但不尖銳,餘韻綿長。
  • 與其他處理法對比:
  • 水洗:酸度更高,風味更乾淨(普洱水洗豆常有茶感)。
  • 日曬:發酵感更強,可能有酒香或莓果調。

4. 沖煮建議

  • 烘焙度:黃蜜豆適合中淺至中度烘焙,以保留其酸甜平衡。
  • 沖煮方式:
  • 手沖(V60/扇形濾杯):水溫90-92°C,中度研磨,強調層次感。
  • 法壓壺:突出醇厚度和甜感。
  • 冷萃:能放大蜂蜜和水果風味。
  • 搭配:適合單獨品飲,或搭配輕乳酪蛋糕、焦糖甜點。
