Flavor notes: Osmanthus, Yakult, sweet wine, honey
Region: Colombia
Farm: Mountain View Farm
Altitude: 1800m
Varietal: Castillo :
A hybrid of Caturra and Timor, this variety is highly resistant to coffee leaf rust while offering high-quality flavor. Flavor profile: Typically features notes of citrus, caramel, and nuts, with prominent sweetness, medium acidity, and a relatively full body.
Process: Carbonic Maceration + Enzyme Washed :
- Carbonic Maceration: Similar to winemaking techniques; coffee cherries are placed in a sealed container infused with CO2 for anaerobic fermentation to enhance fruitiness and wine-like notes. Commonly associated with anaerobic fermentation, but Carbonic Maceration allows for more precise control over the fermentation environment, preventing excessive acetic acid production.
- Enzyme Washed: Specific enzymes (such as pectinase) are added during the fermentation stage to accelerate the breakdown of pectin and guide the development of specific flavor notes (such as osmanthus and tropical fruits).
