  • 在高海拔環境下栽培的卡杜拉,通常展現更為扎實的結構與清晰輪廓,使風味表現更為集中。

處理:糖蜜酵母水洗發酵處理

  • 此批次採用特殊糖蜜酵母發酵技術,於發酵階段導入特定酵母與糖源控制發酵進程,再進行水洗處理。透過精準控溫與時間管理,使風味朝向濃郁甜感與巧克力調性發展。
  • 此處理方式強化了可可與黑巧克力的深層風味,同時提升蜜糖般的甜潤口感,奶油質地更加明顯,使整體風味結構厚實而集中,展現沉穩而細膩的風味輪廓。
