- 卡杜拉(Caturra):是波旁(Bourbon)的天然變種,甜感高,body飽滿,帶有柑橘、焦糖調性。
- 瑰夏(Geisha):原生於埃塞俄比亞,後在巴拿馬成名,以茉莉花、佛手柑、桃子、蜂蜜等頂級風味著稱。
拼配目的:
卡杜拉提供甜感與醇厚度,瑰夏增加花香與酸質複雜度。
處理:葡萄乾蜜處理 (Raisin Honey Process)
- 傳統蜜處理(Honey Process):
去除果皮,保留部分果膠(粘液層)進行乾燥,甜感比水洗高,比日曬乾淨。
- 葡萄乾蜜處理(Raisin Honey):
先發酵,再乾燥:咖啡櫻桃採收後不立即去皮,而是整顆曬乾(類似"葡萄乾"狀態),再去除果皮進行蜜處理。
雙重發酵:
- 第一階段:帶果皮發酵(類似"厭氧日曬"),增強酒香和深色水果調性。
- 第二階段:去果皮後保留果膠蜜處理,增加甜感與body。
葡萄乾蜜處理比普通蜜處理風味更濃郁,帶有熟成葡萄酒、莓果醬、蜂蜜的風味。
