Traditional washed process: Removal of the fruit skin and pulp, followed by 12-72 hours of soaking in fermentation tanks to remove mucilage. After rinsing with clean water, the beans are sun-dried, preserving high acidity and purity.
Impact on flavor: Highlights a crisp, citrusy and green tea-like acidity, with a lighter body and a clean finish. Compared to natural processing, the floral and fruity notes are more elegant rather than the bold sweetness of tropical fruits.
