傳統水洗流程：去除果皮果肉，發酵池中浸泡12-72小時去除果膠。清水沖洗後晾曬，保留高酸度與純淨度。
對風味的影響：突出柑橘、綠茶般的清新酸質，body較輕盈，余韻乾淨。與日曬處理相比，花果香更優雅，而非熱帶水果的奔放甜感。
